Georgia S Tarragon Mustard Vinaigrette
|Garlic||1 Clove (5 gm), minced|
|Extra virgin olive oil||1⁄2 Cup (8 tbs)|
|Tarragon vinegar||2 Tablespoon|
|Dijon mustard||3 Teaspoon|
|Lemon juice||1 Tablespoon|
|Ground black pepper||To Taste|
|Minced tarragon||2 Tablespoon|
1. In a bowl, crush the garlic with salt and 1 tablespoon of the olive oil until the mixture forms a paste.
2. Add the tarragon vinegar, mustard, lemon juice, pepper, and sugar.
3. Add the remaining oil in a stream, whisking the dressing until it is combined well. Just before serving, stir in the fresh tarragon.
