Fresh Turnip Mustard Or Collard Greens
|Salad greens||1 Bunch (100 gm)|
|Salt pork||1⁄4 Pound, diced|
Check leaves of fresh greens carefully; remove pulpy stems and discolored spots on leaves.
Wash thoroughly in several changes of warm water; add a little salt to the last water.
Place greens in colander to drain.
Cook salt pork about 10 minutes in boiling water in covered saucepan.
Add greens a few at a time, cover pot, and cook slowly until greens are tender.
Do not overcook.
Add additional salt, if needed.
