1) Heat up a large skillet on high heat and drizzle little olive oil.
2) Add the shallots and garlic to caramelize in hot oil.
3) Add the mussles and pour in chicken stock.
4) Season with fresh thyme, salt and pepper.
5) Brush the bread slices with olive oil and place inside oven unbroiled.
6) Add the butter on the mussels and serve the cooked mussels on top of the toasted bread.
