Mussels And Snow Peas
|Mussels||2 Pound (1 Kilogram)|
|Snow peas||1⁄2 Pound, trimmed (255 Grams)|
|Lychees||12 , peeled (Fresh)|
|Fresh ginger slice||4 , finely sliced|
|Tomato dressing||125 Milliliter (1/2 Cup)|
Scrub mussels and pull out beard.
Discard any mussels with broken or open shells.
Bring 1 cup (250 mL) water to boil, add mussels, cover and steam for 3-5 minutes until they open.
Discard any unopened mussels.
Remove mussels from shells and place in a bowl.
Cover and set aside.
Cover snow peas with boiling water and leave for 1 minute.
Drain and cool with water.
Add snow peas to mussels.
Halve lychees and remove pits.
Arrange with mussels.
Sprinkle ginger over.
Pour dressing over mussel mixture and stir to coat all ingredients.
Cover and chill for 30 minutes.
Drain off any excess dressing
