Sea Trout With Field Mushrooms

Ingredients
  Field mushrooms 1 3⁄4 Pound
  Smoked streaky bacon 2 Ounce, diced
  Shallot 1 , chopped
  Salt To Taste
  Pepper To Taste
  Sea trout fillets 6
  Fresh lemon juice 2 Tablespoon
  Madeira 2 Tablespoon
  Cornstarch 1 1⁄2 Teaspoon (Corn Flour)
  Sour cream 3 Tablespoon (Crme Fraiche)
Directions

Wipe the field mushrooms with a damp cloth or kitchen paper, peel if necessary and chop coarsely.
Put the bacon and shallot in a casserole.
Microwave, uncovered, on HIGH for 2 minutes.
Add the field mushrooms.
Cover and microwave on HIGH for 4 minutes.
Add salt and pepper and stir well.
Cover and microwave on HIGH for a further 3 minutes.
Rinse the trout fillets under plenty of cold running water and pat dry on kitchen paper.
Arrange the fish, side by side in an oval dish.
Season with salt and pepper.
Cover and micro wave on HIGH for 5 minutes.
Drain the mushrooms over a bowl.
Set aside the cooking liquid.
Add the lemon juice and Madeira, and stir into the cornstarch (cornflour) gradually until smooth.
Microwave for 1 minute on HIGH.
Add the sour cream (creme fraiche) and stir in the field mushrooms.
Pour the whole over the fish, making sure it is completely covered with the sauce.
Cover and microwave on HIGH for 4 minutes.
