Mushroom & Cheese Sandwiches
|Mushrooms||1⁄2 Pound, sliced|
|Rye bread slices||4 , toasted and buttered|
|Tomatoes||2 Medium, seeded and sliced|
|Jack cheese slice||6 Ounce|
|Chopped parsley||2 Tablespoon|
Place butter in a 9 inch nonmetallic pie plate.
Microwave, uncovered, on HIGH (100%) for 30 seconds or until butter is melted.
Stir in mushrooms.
Microwave, uncovered, on HIGH (100%) for 7 to 8 minutes (stirring every 3 minutes) or until liquid evaporates.
Sprinkle with salt and pepper.
Reserving 8 mushroom slices for garnish, evenly distribute remaining mushrooms over bread slices.
Arrange tomato slices over mushrooms, and cover evenly with cheese.
Place 2 reserved mushrooms on top of each sandwich; sprinkle with parsley.
Place sandwiches on a flat 10 or 12 inch plate.
Microwave, uncovered, on HIGH (100%) for 2 minutes or until cheese is melted.
