Mushrooms A La Greoque
|White button mushrooms||1 Pound|
|Lemon juice||3 Tablespoon|
|Tomato concentrate||3 Tablespoon|
|Dry white wine||3⁄4 Cup (12 tbs)|
|Olive oil||3 Tablespoon|
|Coriander seeds||1⁄2 Teaspoon|
|Dried red chili||1|
|Chopped parsley||1 Tablespoon|
Wipe the mushrooms with a damp cloth or kitchen paper.
Cut the larger mushrooms into quarters.
Pour over the lemon juice.
Mix the tomato concentrate and white wine together.
Add the olive oil, sugar, bayleaf, thyme, coriander and chili.
Add salt and pepper to taste.
Put the mushrooms into a casserole.
Pour the marinade over, cover and microwave on HIGH for 8-10 minutes, depending on the size of the mushrooms.
They should be crisp to the bite.
Leave to cool at room temperature.
Remove the thyme and bayleaf and chill in a refrigerator for 24 hours.
Sprinkle the mushrooms with chopped parsley
