Healthy Sautéed Mushrooms
|Vegetable oil/Butter||1 Tablespoon|
|Fresh mushrooms||1⁄2 Pound, sliced (white and brown)|
|Fresh herbs||2 Tablespoon (or 1 teaspoon dried herbs (italian, basil, rosemary, tarragon or thyme))|
|Salt||1⁄2 Teaspoon (optional)|
|Pepper||1⁄2 Teaspoon (optional)|
1. In a large skillet heat the vegetable oil or butter over medium-high heat.
2. To this add the mushrooms and sauté for 3-4 minutes or until starting to brown.
3. Add in the fresh or dried herbs and if you wish you can season with a little salt and some pepper. Sauté for 1-2 minutes.
4. This can be served hot as a side dish with chicken, to top a steak or in any salad.
It is important to use a large pan so the mushrooms are in a single layer and will brown rather than steam and release all their juices.
Substitute fresh herbs with 1 teaspoon dried herbs like thyme, basil, or tarragon or 1 minced clove garlic.
Seasoning salt or salt free seasonings may be added to taste.
