Method Choose mushrooms which are cup-shaped.
Wipe with a damp cloth, if necessary, and remove stems.
Chop stems with extra mush- rooms.
Melt butter in a frying pan, add onion with chopped mushrooms; cook over medium heat for 2 minutes, or until moisture has evaporated.
Take from heat; add crumbs or soaked bread, squeezed and broken up with a fork.
Season and add herbs.
Pile into mushroom caps, dot with butter and set in a buttered baking dish.
Cover and bake in a hot oven (400Â°F) for 12-15 minutes, or until the mushrooms are tender.
