Kale is high in vitamins and minerals (including calcium). Add that to shiitake mushrooms (high in iron) and you have a healthy delicious vegetable dish. Almost all of our green vegetables are cooked the same way for maximum nutrition. Heat olive oil and garlic in the pan until garlic begins to caramelize. Then add the great vegetables. You don't need any water but be sure to heat at a very low flame. The vegetables will steam in their own moisture. 8 Ounce, chop
1 Cup (16 tbs), slice
1. In a pan, heat olive oil and garlic.
2. Add the mushrooms and kale and toss. Cook with the lid on for 5-8 minutes.
3. Add salt once the kale and mushrooms are cooked and toss.
3. Plate and serve as a healthy side dish.
