Japanese-Style Mixed Mushroom Stir-Fry

This shows how to prepare a dish out of three healthy Japanese mushrooms. These mushrooms are used in Japan as an adjuct to chemotherapy treatment for patients, with good results.
Ingredients
  Garlic 4 Clove (20 gm), chopped
  Shao hsing jiu/Rice wine 1⁄2 Cup (8 tbs)
  Olive oil 2 Tablespoon
  Ginger 1 1⁄5 Inch, finely sliced
  Garlic cloves 4 Medium, chopped
  Shiitake mushrooms 150 Gram, quartered (Fresh)
  Oyster mushrooms 150 Gram (Fresh)
  Enoki mushrooms 150 Gram (Fresh)
  Shaoxing wine/Rice wine 1⁄2 Cup (8 tbs) (Shao Hsing Jiu)
  Sugar 2 Teaspoon
  Soy sauce 3 Teaspoon
  Black rice vinegar 1 1⁄2 Teaspoon
  Sesame oil 1 Teaspoon
  Water 2 Tablespoon (1 - 2 Tablespoon As Needed)
Directions

MAKING
1. Heat a wok until hot and add olive oil into it.
2. Add ginger and garlic, fry for 10-20 seconds.
3. Add shiitake and oyster mushrooms.
4. Then add shao hsing jiu or rice wine, sugar, soy sauce, vinegar, sesame oil and fry for 1 minute.
5. Add enoki mushrooms and add some water. Simmer a couple of minutes.

SERVING
6. Serve hot.
