Marinated Mushrooms

Ingredients
  Button mushrooms 2 Pound
  Water 1 Cup (16 tbs)
  White wine 1 Cup (16 tbs)
  Lemon juice 1⁄4 Cup (4 tbs)
  Salt 4 Teaspoon
  Peppercorns 12
  Bay leaves 2
  Thyme 1⁄2 Teaspoon
  Coriander 1⁄2 Teaspoon
  Boston lettuce leaves 4
Directions

GETTING READY
1. Set lettuce aside till later

MAKING
2. In a large 5-quart Dutch oven, combine all the ingredients and mix well
3. Bring this mixture to the boil over medium heat
4. Reduce heat till low and simmer again for five to seven minutes
5. When the mixture is tender, turn off the heat and set aside to cool
6. Pour this into shallow bowls and set aside to chill. Chill overnight if required

SERVING
7. Serve the chilled mushrooms on lettuce
