Salad Of Raw Mushrooms And Grated Beets
|White mushrooms||3⁄4 Pound|
|Canned baby beets/1 bunch new beets||1 Pound, cooked until just tender, then peeled and sliced|
|Greens/Favorite ones like watercress, lettuce, romaine, bibb lettuce)||3|
|Green onions||5 , finely chopped|
|Vinaigrette dressing||1 Tablespoon|
Wipe mushrooms with damp cloth and slice 1/4 inch thick.
Add beets and greens, broken in bite-size pieces.
Add green onions, then pour dressing over top and toss well.
Makes 6 servings.
