Herb & Nuts Stuffed Mushrooms

Ingredients
  Mushrooms 6
  Corn oil 2 Teaspoon
  Whole grain bread crumbs 3⁄4 Cup (12 tbs) (Soft)
  Garlic 1 Clove (5 gm), minced
  Chopped walnuts 2 Tablespoon
  Fresh basil/Tarragon 2 Teaspoon, minced
  Cottage cheese 1 Tablespoon
  Buttermilk 2 Teaspoon
  Paprika 1 Pinch
  Parmesan cheese 1 Tablespoon, grated (To Garnish)
Directions

GETTING READY
1. Clean the mushrooms with a damp towel without peeling, remove and chop the stems and set the mushroom caps aside

MAKING
2. In a medium skillet, heat a teaspon of oil and saute mushrooms stems for a couple of minutes; add bread crumbs, garlic, nuts, herbs and cottage cheese
3. Add a litrle buttermilk to make this stuffing moist and add flavour with paprika; divide this stuffing between mushroom caps and sprinkle grated Parmesan on top
4. Baste the mushrooms with the rest of the oil using a pastry brush and place under the broiler for five minutes till sizzling hot

SERVING
5. Serve as required
