Marinated Mushrooms With Coriander Seeds

Ingredients
  Small button mushrooms 2 Pound
  Lemon 1⁄2 , juiced
  Salt To Taste
  Wine vinegar 2⁄3 Cup (10.67 tbs)
  Olive oil 2⁄3 Cup (10.67 tbs)
  Garlic 4 Clove (20 gm), crushed
  Thyme sprig 1
  Parsley sprigs 2
  Bay leaf 1
  Peppercorns 6
  Coriander seeds 12
Directions

MAKING
1 Neatly trim the stems and throughly wash the mushrooms.Drain.
2 In a saucepan add cold water along with the mushrooms, lemon juice and salt to taste.
3 Bring to a boil gently and simmer for 10 minutes on low heat.
4 Drain the blanched mushrooms throughly and place them in a shallow earthenare dish.
5 In an enameled saucepan, combine all the remaining ingredients and bring to a boil.
6 Simmer for 20 minutes on low heat.
7 Pour the mixture generously over the blanched mushrooms and marinate covered in the refrigerator for 24 hours.

SERVING
8 Use as desired.
