CARAMELIZED ONION, MUSHROOM AND GOAT CHEESE PIZZA
|Extra virgin olive oil||1 Tablespoon|
|Yellow onion||1 Small, halved top to bottom and thinly sliced|
|Portobello mushroom caps||6 Ounce, coarsely chopped|
|Tomato pasta sauce/Red pasta sauce||1 Cup (16 tbs)|
|Whole wheat pizza crusts/White thin pre-baked pizza crusts||20 Ounce (Such As Boboli, Two 10 Ounce Each)|
|Dried basil||1 Teaspoon|
|Dried oregano||1 Teaspoon|
|Crumbled goat cheese/Fresh/shredded mozzarella cheese||4 Ounce, crumbled|
Preheat the oven to 450 degrees. In a large heavy skillet, heat the oil over medium heat, and add the onions. Sauté them for 2 - 3 minutes, stirring occasionally, until they start to brown. Add the mushrooms and sauté for about 5 more minutes until the mushrooms begin to get dark and tender.
Meanwhile, spread 1/2 cup tomato sauce on each pizza crust, nearly to the edges. Top each with basil and oregano, followed by the mushrooms, onions, and cheese. Bake the pizzas directly on the oven rack for 10 minutes (and prepare the cucumbers, if you are serving them). Allow them to cool for about 2 minutes before slicing them with a pizza cutter.
Scramble Flavor Booster: Top the pizzas with a little fresh basil or oregano just before baking them, and serve them with crushed red pepper flakes at the table.
Tip: At this time of year when we all seem to be cooking and entertaining a lot, eliminate extra dishwashing by making guests' wine glasses identifiable. You can use wine charms or just tie different colored ribbons around the stems of the glasses. If the kids are using disposable cups, have them write their names on their cups with permanent marker so they can keep track of them.
SERVE WITH CUCUMBERS, PEELED AND SLICED, WITH DRESSING
Dip 1 - 2 peeled and sliced cucumbers in dressing of your choice, such Annie's Naturals Goddess, ranch, or Italian dressing.
