NUT, OLIVE & MUSHROOM CROQUETTES

Ingredients
  Cornflakes 1⁄2 Cup (8 tbs)
  Chopped onion 1 Tablespoon
  Salt 1 Teaspoon
  Flour 1 Tablespoon
  Mushrooms 1 Can (10 oz)
  Rice 1 Cup (16 tbs)
  Olives 1⁄2 Cup (8 tbs)
  Pecans/Walnuts / cashews 1⁄2 Cup (8 tbs)
  Milk 1⁄2 Cup (8 tbs)
  Hot sauce 1⁄2 Teaspoon
  Fat 1 Cup (16 tbs) (For deep frying)
Directions

Chop mushrooms and brown in butter, Chop olives and nuts, add onion, hot sauce, salt and dash of black pepper.
Pour hot milk over 1/2 cup cornflakes and beat until creamy.
Add to above.
Then add the rest of cornflakes with the exception of 1/4 cup.
Mix in the flour to bind, shape into croquettes.
Coat each with remaining cornflakes, dip 'in milk, then fin flour and fry in deep fat.
Serve with tomato sauce.
