NUT, OLIVE & MUSHROOM CROQUETTES
|Cornflakes||1⁄2 Cup (8 tbs)|
|Chopped onion||1 Tablespoon|
|Mushrooms||1 Can (10 oz)|
|Rice||1 Cup (16 tbs)|
|Olives||1⁄2 Cup (8 tbs)|
|Pecans/Walnuts / cashews||1⁄2 Cup (8 tbs)|
|Milk||1⁄2 Cup (8 tbs)|
|Hot sauce||1⁄2 Teaspoon|
|Fat||1 Cup (16 tbs) (For deep frying)|
Chop mushrooms and brown in butter, Chop olives and nuts, add onion, hot sauce, salt and dash of black pepper.
Pour hot milk over 1/2 cup cornflakes and beat until creamy.
Add to above.
Then add the rest of cornflakes with the exception of 1/4 cup.
Mix in the flour to bind, shape into croquettes.
Coat each with remaining cornflakes, dip 'in milk, then fin flour and fry in deep fat.
Serve with tomato sauce.
