Creamed Peas and Mushrooms
|Fresh mushrooms||1⁄4 Pound, sliced|
|Onion||1⁄4 Teaspoon, grated|
|Milk||1 Cup (16 tbs)|
1. Shell peas. Cook.
2. Cook mushrooms and onion in hot butter in a saucepan, over medium heat, until mushrooms are tender but not browned.
3. Remove from heat and stir in flour. Gradually stir in milk.
4. Cook over medium heat, stirring constantly, until sauce is smooth and thickened. Add salt, pepper, and nutmeg.
5. Drain peas and stir lightly into sauce. Add more salt if needed.
