Parmesan Sole With Mushrooms
|Fresh mushrooms||4 Ounce, sliced|
|Onion||1 Small, chopped to make 1/2 cup|
|Sole fillets||1 Pound|
|Sour cream||1⁄2 Cup (8 tbs)|
|Grated parmesan cheese||3 Tablespoon|
|Dry bread crumbs||2 Tablespoon|
|Chopped fresh parsley||1 Tablespoon|
1. Place mushrooms, onion and margarine in 1-quart casserole. Cover tightly and microwave on high about 2 minutes or until onion is crisp-tender; stir.
2. If fish fillets are large, cut into 4 serving pieces, pat dry. Arrange fish, thickest parts to outside edges, in rectangular dish, 11 x 7 x 1 1/2 inches. Spoon mushroom mixture over fish; sprinkle with salt and pepper. Cover with waxed paper and microwave on high 3 minutes.
3. Mix sour cream and cheese; spread over mushroom mixture. Sprinkle with bread crumbs. Microwave uncovered 3 to 5 minutes or until fish flakes easily with fork. Sprinkle with paprika and parsley.
