Sausage & Cheese Stuffed Mushrooms
|Fresh mushrooms||8 Large|
|Onion||1 Small, finely chopped|
|Garlic||1 Clove (5 gm), minced|
|Summer sausage/Pepperoni||2 Ounce, finely chopped|
|Crackers||6 , crushed|
|Grated parmesan cheese||3 Tablespoon|
|Minced parsley||1 Tablespoon|
|Lemon pepper seasoning||1⁄4 Teaspoon|
|Italian seasoning||1⁄8 Teaspoon|
Wipe mushrooms with a damp paper towel to clean.
Combine butter, chopped mushroom stems, onion, garlic, and chopped meat in a 2-cup glass measure.
Microwave at HIGH 3 minutes.
Add cracker crumbs, cheese, parsley, and seasonings.
Fill mushroom caps with mixture.
Arrange in a circle on a 9-inch glass pie plate or other plate suitable for microwaving.
Cover with waxed paper.
Microwave at HIGH 3 to 4 minutes or until heated through.
