Peas, Mushrooms And Shallots

Ingredients
  Fresh green peas 3 Pound
  Butter 1 Tablespoon
  Dry shallots 1⁄2 Pound, peeled and quartered
  Mushroom caps 1⁄2 Pound, quartered
  Chopped fresh parsley 1 Tablespoon
  Chopped fresh basil 1 Teaspoon
Directions

Cook peas in salted, boiling water 8 minutes. Do not cover. Drain and place peas under cold, running water. Drain again and set aside.
Melt butter in saute pan. Add shallots and cook 4 minutes over medium heat.
Add mushrooms and season well. Continue cooking 4 minutes.
Mix in parsley, basil, salt and pepper. Add green peas and cook 4 minutes over low heat.
Serve with a roast or grilled meat.
