4 sole fillets (about 4 oz. each)
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup sliced fresh mushrooms
1 medium tomato, seeded and chopped
1/2 cup (2 oz.) Sargento Classic Supreme Shredded or Fancy Supreme Shredded Mozzarella Cheese
1/4 cup (1 oz.) Sargent
Place fillets in lightly greased 11 x 7-inch baking dish.
Sprinkle salt, pepper, mushrooms and tomatoes over fillets.
Cover and bake at 325°F 20 to 25 minutes or until fish flakes easily with a fork.
Uncover; sprinkle with Mozzarella and Parmesan cheeses.
