Fried Garlic Mushrooms

  Olive oil 1 Tablespoon
  Chopped garlic 1 Tablespoon
  Mushrooms 1 Pound, rinsed and drained (1 1/ 2- To 2-In-Wide Caps)
  Dry sherry 3 Tablespoon
  Hot chili flakes 1⁄4 Teaspoon
  Chopped parsley 1 Tablespoon
  Salt To Taste
  Pepper To Taste

1. In a 10- to 12-inch frying pan over high heat, stir oil, garlic, and mushrooms until garlic is limp, about 2 minutes. Add sherry and chili flakes; cover and simmer over medium-high heat, stirring occasionally, until most of the liquid is evaporated and mushrooms are browned, 7 to 10 minutes.
2. Stir in parsley. Add salt and pepper to taste.
