Mushroom Beignets

Ingredients
  Water 1⁄2 Cup (8 tbs)
  Butter/Margarine 1⁄4 Cup (4 tbs)
  Salt 1 Dash
  All purpose flour 1⁄2 Cup (8 tbs), sifted
  Eggs 2
  Mushroom filling 1 Tablespoon
Directions

Put water, butter, and salt in a small saucepan and bring to a boil.
Add flour all at once.
Stir hard, cooking until mixture leaves sides of pan and forms a ball.
Beat in eggs, one at a time.
Beat until mixture is thick and shiny.
Using 2 teaspoons, shape little rounds of mixture (about 1 teaspoon each) and place 2 inches apart on ungreased baking sheet.
Bake in preheated very hot oven (450°F.) for 15 minutes; lower heat to moderate (350°F.) and bake for 20 minutes longer.
Cool.
Slit puff shells on one side and fill with Mushroom Filling.
