Grilled Regular Mushrooms With Sherry
|Medium mushrooms||2 Pound, stemmed and cleaned|
|Olive oil||1⁄4 Cup (4 tbs)|
|Freshly cracked black pepper||To Taste|
|Unsalted butter||3 Tablespoon, cut into small pieces|
|Minced garlic||1 Tablespoon|
|Roughly chopped fresh parsley||1⁄2 Cup (8 tbs)|
|Sherry||1⁄4 Cup (4 tbs)|
In a medium bowl, combine the mushrooms, olive oil, and salt and pepper to taste and toss well.
Grill the mushrooms over a hot fire until they are brown and soft, 3 to 5 minutes.
To check for doneness: Cut into a mushroom and see if it looks moist all the way through.
Remove the mushrooms from the fire and place in a medium bowl.
Add the butter, garlic, parsley, and sherry and mix gently until the butter melts.
Season to taste with salt and pepper and serve.
