Anchovy Marinated Mushrooms
|Canned anchovies||2 Ounce, drained (1 Can)|
|Garlic||1 Clove (5 gm), minced|
|Diced pimiento||2 Ounce, drained (1 Jar)|
|Vegetable oil||1 1⁄3 Cup (21.33 tbs)|
|Lemon juice||1 Cup (16 tbs)|
|Dried whole tarragon||1⁄2 Teaspoon|
|Dried whole basil||1⁄2 Teaspoon|
|Dried whole oregano||1⁄4 Teaspoon|
|Small fresh mushrooms||2 Pound|
Mash anchovies in a shallow container.
Add minced garlic and next 7 ingredients; stir mixture well.
Add mushrooms, and toss gently to coat.
Cover and refrigerate 8 hours, stirring occasionally.
Drain marinated mixture well, and serve on lettuce leaves, if desired.
