Green Bean And Mushroom Salad
|Fresh green beans||3⁄4 Pound, trimmed|
|Water||1⁄4 Cup (4 tbs)|
|Low calorie mayonnaise||1⁄4 Cup (4 tbs)|
|Chopped green onions||3 Tablespoon|
|Fresh lemon juice||2 Tablespoon|
|Olive oil||1 1⁄2 Tablespoon|
|Dijon style mustard||1 Tablespoon|
|Mushroom slices||2 Cup (32 tbs) (Use Fresh)|
|Chopped red bell pepper||1⁄4 Cup (4 tbs)|
|Minced fresh basil/3/4 teaspoon dried basil leaves, crushed||1 Tablespoon|
|Black pepper||1 Dash|
To Microwave: Cut beans into 1 1/2 inch pieces; place in 1 1/2-quart microwave-safe dish.
Add water; cover.
Microwave on HIGH (100% power) 5 to 6 minutes or until beans are crisp-tender, stirring halfway through cooking; drain.
Cover beans with ice water to stop further cooking; set aside.
Combine mayonnaise, green onions, lemon juice, oil and mustard in large bowl; mix well.
Add drained beans, mushrooms, red pepper and basil; mix lightly.
Cover; refrigerate several hours.
Season with black pepper
