Marinated Mushrooms

Ingredients
  Button mushrooms 500 Gram
  Lemon juice 2 Tablespoon
  Olive oil 125 Milliliter
  Garlic 1 Clove (5 gm), crushed
  Bacon (streaky) rashers 2 , rind less and chopped
  Tomatoes 6 , peeled, seeded and chopped
  Bay leaves 2
  Chopped coriander 2 Tablespoon
  Dry white wine 125 Milliliter
  Brandy 1 Tablespoon
Directions

Sprinkle mushrooms with lemon juice.
Heat oil in a saucepan.
Saute garlic and bacon for 5 minutes.
Stir in remaining ingredients.
Bring to the boil, then simmer until thickened.
Pour over mushrooms.
Cool.
Cover dish and marinate overnight in the refrigerator.
