Hot Cross Fruit Muffins
|Biscuit mix||2 Cup (32 tbs)|
|Ground cardamom||3⁄4 Teaspoon|
|Golden raisins||1⁄2 Cup (8 tbs)|
|Chopped citron||1⁄4 Cup (4 tbs)|
|Egg||1 , well beaten|
|Milk||2⁄3 Cup (10.67 tbs)|
|Melted shortening/Cooking / salad oil||2 Tablespoon|
Mix the biscuit mix, sugar, and cardamom in a bowl; stir in the raisins and citron.
Blend the egg, milk, and shortening thoroughly.
Add to dry ingredients; stir quickly and lightly until dry ingredients are barely moistened.
Spoon batter into greased 2 1/2-inch muffin-pan wells.
Bake at 400°F about 15 minutes.
Meanwhile, prepare Frosting.
Remove muffins from pan to wire rack; cool slightly.
Then form a cross on each muffin, using the frosting.
