Pear Yogurt Muffins

Ingredients
  Sifted flour 2 Cup (32 tbs)
  Granulated sugar 1⁄2 Cup (8 tbs)
  Baking powder 1 1⁄2 Teaspoon
  Baking soda 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Plain yogurt 8 Ounce (1 Container, Room Temperature)
  Egg 1 , lightly beaten
  Vegetable oil/Melted shortening 1⁄4 Cup (4 tbs)
  Grated lemon peel 2 Teaspoon
  Canned pears 16 Ounce, drained and diced (1 Can)
Directions

Preheat oven to 400°.
Sift dry ingredients to-gether in large bowl; set aside!.
Stir yogurt until creamy in small bowl; blend in egg.
Drizzle oil into yogurt-egg mixture; blenq well.
Add lemon peel.
Pour into flour mixture.
Gently fold in pears.
Stir just until flour mixture is moistened.
Fill greased muffin cups 2/3 full- Bake 20 to 25 minutes until golden brown.
Remove from pan immediately.
Serve warm.
