Flyaway Lemon Muffins

The delightful Flyaway Lemon Muffins is named so because of its light and soft texture! Try making these wonderful Flyaway Lemon Muffins at home. You will get addicted to then with the first bite!
  Plain flour 2 Cup (32 tbs)
  Baking powder 1 Tablespoon
  Salt 2 Teaspoon
  Walnut pieces 2 Cup (32 tbs)
  Grated lemon rind 1 Teaspoon
  Mineral water/Soda water 1 Cup (16 tbs)
  Butter 185 Gram, melted
  Egg 1 , lightly beaten
For topping
  Sugar 4 Cup (64 tbs)

Sift flour, baking powder and salt together into a bowl. Add walnuts and lemon rind and toss to coat walnuts with flour. Mix together the mineral or soda water, butter and egg and pour over flour mixture, stirring with just a few strokes until moistened. The batter will be lumpy. Spoon into well-greased muffin tins, filling to two-thirds full. Use a large spoon and try to fill each tin with one spoonful. Mix sugar and rind for topping and sprinkle over. Bake in hot oven 200C (400F) for 20-25 minutes or until browned and well risen. Serve hot with butter.
