|Sifted cake flour||2 Cup (32 tbs) (And Pastry Flour)|
|Baking powder||3 Teaspoon|
|White sugar/Brown sugar||1⁄2 Cup (8 tbs)|
|Milk||1 Cup (16 tbs)|
|Melted butter||3 Tablespoon|
|Grated lemon rind/Orange rind||1⁄2 Teaspoon|
|White snow||1⁄2 Cup (8 tbs)|
|Raisins||1⁄2 Cup (8 tbs)|
Mix dry ingredients in a bowl.
Make a depression in the centre and pour in the milk, butter and grated rind.
Add snow and raisins.
Stir only until dry ingredients disappear.
Spoon into 12 buttered muffin cups filling two thirds full.
Bake at 400F for 15 to 18 minutes.
Serve hot with butter or strawberry preserves.
