Rolled Oats Muffins

Ingredients
  Rolled oats 2 Cup (32 tbs)
  Sour milk/Buttermilk 1 1⁄2 Cup (24 tbs)
  Melted butter/Peanut oil 1⁄3 Cup (5.33 tbs)
  White sugar/1/2 cup brown sugar 1⁄3 Cup (5.33 tbs)
  Egg 1 , well beaten
  Soda 1 Teaspoon
  Salt 1⁄2 Teaspoon
  All purpose flour 1 Cup (16 tbs) (Unsifted)
  Raisins/Cut dates 1⁄2 Cup (8 tbs)
Directions

Mix rolled oats and sour milk or buttermilk thoroughly and allow to stand overnight.
In the morning, add the remaining ingredients.
Bake in oiled muffin tins at 350 to 375F 20 minutes.
Makes 18 good sized muffins.
Sometimes I use whole wheat flour in place of white.
