Blue Ribbon Muffins
|Whole wheat flour/Graham flour||1 Cup (16 tbs)|
|All purpose flour||1 Cup (16 tbs)|
|Brown sugar||1⁄4 Cup (4 tbs)|
|Eggs||2 , beaten|
|Sour milk||1 Cup (16 tbs)|
|Melted butter/Vegetable oil||1⁄4 Cup (4 tbs), melted|
|Baking soda||1 Teaspoon|
Combine the flours and brown sugar in a large bowl and blend well.
Stir in the eggs.
Add the sour milk, butter, baking soda and salt; stir just until moistened.
Fill greased or paper-lined muffin cups just over 1/2 full.
Bake at 425 degrees for 15 to 20 minutes or until muffins test done.
Note: If you do not have sour milk, omit the baking soda and use 2 teaspoons baking powder stirred into 1 cup sweet milk.
