Wales, The Muffins
|All purpose flour||1 1⁄2 Cup (24 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Baking powder||2 Teaspoon|
|Raisins||1 1⁄4 Cup (20 tbs)|
|Eggs||2 , beaten|
|Buttermilk||1 Cup (16 tbs)|
|Margarine||2 Tablespoon, melted|
Mix flour, sugar, salt, baking powder, soda, cinnamon and nutmeg in a large bowl.
Mix in raisins.
Whisk eggs, milk and melted shortening.
Make a well in the dry ingredients and add the egg mixture.
Stir together quickly.
Batter will be lumpy.
Fill greased muffin cups two-thirds full and bake until tester comes out clean.
Bake at 400 degrees 20-25 minutes
