Creole Breakfast Muffins
|Flour||1 1⁄2 Cup (24 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Baking powder||1 1⁄2 Teaspoon|
|Cooked white rice||1 Cup (16 tbs), cooled|
|Butter||2 Tablespoon, melted|
|Buttermilk||1 1⁄8 Cup (18 tbs)|
|Confectioner's sugar||1 Cup (16 tbs)|
Mix flour, sugar, baking powder, soda, salt and spices.
Stir in rice.
Whisk egg, butter and buttermilk, and add quickly to dry ingredients.
Spoon into greased muffin cups and bake until done.
Remove from muffin tins while still warm, sprinkling tops with confectioner's sugar.
Bake at 400 degrees 15-20 minutes
