Creole Breakfast Muffins

Creole Breakfast Muffins are unique and tasty muffins. I served it for breakfast this morning and my family loved it! Try this Creole Breakfast Muffins recipe and you will understand why.
Ingredients
  Flour 1 1⁄2 Cup (24 tbs)
  Sugar 1⁄4 Cup (4 tbs)
  Baking powder 1 1⁄2 Teaspoon
  Soda 1⁄2 Teaspoon
  Salt 1⁄4 Teaspoon
  Cinnamon 1 Teaspoon
  Nutmeg 1 Teaspoon
  Cooked white rice 1 Cup (16 tbs), cooled
  Egg 1
  Butter 2 Tablespoon, melted
  Buttermilk 1 1⁄8 Cup (18 tbs)
  Confectioner's sugar 1 Cup (16 tbs)
Directions

Mix flour, sugar, baking powder, soda, salt and spices.
Stir in rice.
Whisk egg, butter and buttermilk, and add quickly to dry ingredients.
Spoon into greased muffin cups and bake until done.
Remove from muffin tins while still warm, sprinkling tops with confectioner's sugar.
Bake at 400 degrees 15-20 minutes
