Nutty Pumpkin Muffins
|Firmly packed brown sugar||3⁄4 Cup (12 tbs)|
|Butter/Margarine||1⁄4 Cup (4 tbs), melted|
|Cooked pumpkin||1 Cup (16 tbs) (Canned Or Mashed)|
|Buttermilk||1⁄2 Cup (8 tbs)|
|All purpose flour||2 Cup (32 tbs)|
|Baking powder||2 Teaspoon|
|Ground cinnamon||1 Teaspoon|
|Ground allspice||1 Teaspoon|
|Ground cloves||1⁄4 Teaspoon|
|Chopped walnuts/Pecans||1⁄2 Cup (8 tbs)|
|Raisins||1⁄2 Cup (8 tbs)|
Combine sugar, eggs, and butter in a large mixing bowl, beat until sugar dissolves.
Add pumpkin and buttermilk; beat until smooth.
Combine remaining ingredients, add to pumpkin mixture, stirring just to moisten dry ingredients.
Spoon into greased muffin pans, filling two-thirds full.
Bake at 400Â° for 20 to 25 minutes.
