Middle East Orange Date Muffins
|Chopped dates||2 Cup (32 tbs)|
|Water||1 Cup (16 tbs)|
|Butter||2 Tablespoon, melted|
|Flour||2 Cup (32 tbs)|
|Baking powder||2 Teaspoon|
|Baking soda||1⁄2 Teaspoon|
|White sugar||2⁄3 Cup (10.67 tbs)|
|Chopped nuts||1 Cup (16 tbs)|
Chop dates and put into a large mixing bowl.
Squeeze juice from two large oranges and add water to fill to one cup.
Put orange juice, water and the rind of one orange into the blender and puree.
Pour over dates.
Let stand about 15 minutes.
Add the rest of the ingredients, stir and fill muffin tins to three-fourths full.
Bake until brown or until testing knife or toothpick comes out clean.
Bake at 375 degrees about 25 minutes
