Bourbon Corn Muffins
|Coarse cornmeal||1 1⁄2 Cup (24 tbs)|
|Buttermilk||1 1⁄2 Cup (24 tbs)|
|Bourbon whiskey||1⁄4 Cup (4 tbs)|
|Brown sugar||1⁄3 Cup (5.33 tbs)|
|Unbleached flour||1 1⁄2 Cup (24 tbs)|
|Baking powder||1 1⁄2 Teaspoon|
|Butter||1⁄4 Cup (4 tbs), melted|
Combine all ingredients and let stand one hour to soak corn meal.
Whisk the two eggs and add to the cornmeal mixture.
In another bowl, sift together flour, soda and baking powder.
Stir into corn meal mixture.
Add melted butter, stirring quickly, and spoon into greased muffin tins.
Bake until done and enjoy while still warm.
Bake at 400 degrees 15 minutes
