Maple Oat Bran Muffins
|Buttermilk||2 Cup (32 tbs)|
|Eggs/3 egg whites||2|
|Safflower oil||3 Tablespoon|
|Maple syrup||1⁄2 Cup (8 tbs)|
|Oat bran||1⁄2 Cup (8 tbs)|
|Flour||2 Cup (32 tbs)|
|Baking powder||2 Tablespoon|
|Soda||1 1⁄2 Teaspoon|
|Pecans||1 Cup (16 tbs), chopped|
In a large bowl combine buttermilk, eggs or whites, oil, syrup, oat bran cereal, and oat bran.
Stir to blend and allow to stand while you assemble the flour, baking powder, soda, salt and pecans in another bowl.
Combine quickly and spoon into muffin tins.
Bake on center shelf until brown.
Bake at 375 degrees 20 minutes
