Oat Bran Spice Muffins
|Oat bran||1 Cup (16 tbs)|
|Whole-wheat flour||1 Cup (16 tbs) (wholewheat)|
|Unbleached flour||1 Cup (16 tbs)|
|Baking powder||1 Tablespoon|
|Baking soda||1 1⁄2 Teaspoon|
|Walnuts||1 Cup (16 tbs), chopped|
|Apple||1 Cup (16 tbs), unpeeled|
|Brown sugar||1⁄2 Cup (8 tbs)|
|Buttermilk||1 1⁄2 Cup (24 tbs)|
|Safflower oil||5 Tablespoon|
Blend the first eight ingredients together well.
Dissolve the brown sugar in the buttermilk, add egg whites and oil.
Whisk until well mixed.
Combine with dry ingredients quickly not stirring over 10 seconds.
Spoon into muffin pans and bake.
Bake at 400 degrees 20 minutes
