Mexico Blue Corn Muffins

Mexico Blue Corn Muffins is my husbands favorite muffin. He will happily gobble it down no matter when I serve it to him. Try this wonderful Mexico Blue Corn Muffins recipe to find out why it is so addictive!
  Blue corn meal 1 1⁄2 Cup (24 tbs)
  Unbleached flour 1⁄2 Cup (8 tbs)
  Baking powder 3 Teaspoon
  Soda 1 Teaspoon
  Salt 1⁄4 Teaspoon
  Eggs 2
  Honey 1 Tablespoon
  Oil 1 Tablespoon
  Buttermilk 1 Cup (16 tbs)

Mix together blue corn meal, flour, baking powder, soda and salt in a large bowl.
In another bowl, whisk eggs with honey, oil and buttermilk.
Make a well in the dry ingredients and quickly stir in the liquid, stirring not more than 10 seconds.
Batter will be thin.
Spoon into greased muffin tins and bake until lightly brown.
Muffins will be crusty on the outside, tender and blue inside.
Serve warm with butter.
Bake at 375 degrees 18-20 minutes
