Oat Bran Applesauce Muffins
|Oat bran||2 Cup (32 tbs)|
|Unbleached flour||1⁄4 Cup (4 tbs)|
|Nuts||1⁄4 Cup (4 tbs), chopped|
|Raisins||3⁄4 Cup (12 tbs)|
|Baking powder||3 Teaspoon|
|Brown sugar||1⁄4 Cup (4 tbs)|
|Egg whites||2 (or 1 egg)|
|Applesauce||1 Cup (16 tbs)|
|Buttermilk||3⁄4 Cup (12 tbs)|
|Vegetable oil||2 Tablespoon|
Combine oat bran, flour, nuts, raisins, baking powder, soda, cinnamon and brown sugar in a large bowl.
Mix egg, applesauce, buttermilk and vegetable oil in another bowl.
Blend quickly with dry ingredients.
Fill greased muffin tins two-thirds full.
Test for doneness with toothpick, which should come out moist but not wet.
Bake at 425 for 15-17 minutes
