Mincemeat Muffins

Ingredients
  Unbleached flour 1 Cup (16 tbs)
  Whole wheat pastry flour 1⁄2 Cup (8 tbs)
  Baking powder 1 1⁄2 Teaspoon
  Soda 1⁄2 Teaspoon
  Sugar 1⁄2 Cup (8 tbs)
  Cinnamon 1 1⁄2 Teaspoon
  Eggs 2 , beaten
  Butter 3 Tablespoon, melted
  Buttermilk 1 Cup (16 tbs)
  Mincemeat 1 Cup (16 tbs) (Use Prepared Mincemeat For Convenience)
Directions

Mix together white and whole wheat flour, baking powder, soda, sugar and cinnamon in a large bowl.
In another bowl, whisk eggs with melted butter and buttermilk.
Make a well in dry ingredients and quickly stir in liquid ingredients.
Cover bottoms of greased muffin cups with one spoonful of batter each.
Spoon in one heaping tablespoon of mincemeat.
Cover with remaining batter.
Bake until golden brown—your kitchen will be filled with spicy fragrance.
Serve warm.
Bake at 400 degrees 15-20 minutes
