Raisin Bran Muffins
|Bran||1 Cup (16 tbs), cover with 1 cup boiling water and let stand for 20 minutes|
|Butter/Margarine||1⁄2 Cup (8 tbs)|
|Brown sugar||3⁄4 Cup (12 tbs)|
|Flour||2 1⁄2 Cup (40 tbs)|
|Baking soda||2 1⁄2 Teaspoon|
|Raisin bran cereal||2 Cup (32 tbs)|
|Buttermilk||2 Cup (32 tbs)|
|Raisins||1 Cup (16 tbs)|
|Coarsely chopped walnuts||1 Cup (16 tbs)|
Cover bran with one cup boiling water.
Set aside for 20 minutes.
Mix shortening, sugar, eggs and bran with water in a food processor.
Remove to a large bowl and beat in flour, soda, salt, cereal and buttermilk.
Fold in raisins and nuts.
Spoon into muffin cups and bake until done.
Bake at 375 degrees 20 minutes
