Oat Bran Muffins
|Oat bran||1 Cup (16 tbs)|
|Oatmeal||2⁄3 Cup (10.67 tbs)|
|Whole-wheat flour||1⁄3 Cup (5.33 tbs)|
|Unbleached flour||2⁄3 Cup (10.67 tbs)|
|Raisins||1⁄3 Cup (5.33 tbs)|
|Walnuts||1⁄2 Cup (8 tbs), chopped|
|Baking powder||1 Tablespoon|
|Buttermilk||1 1⁄2 Cup (24 tbs)|
|Maple syrup||1⁄4 Cup (4 tbs)|
|Melted butter/Melted margarine||6 Tablespoon|
Combine the first eight ingredients in a large bowl and stir until well mixed.
In a smaller bowl whisk the egg, buttermilk, maple syrup and melted shortening.
Add the moist ingredients to the dry ones in the large bowl, stirring until incorporated well.
Spoon into muffin tins which have been sprayed with a non-stick solution and bake until brown.
Bake at 375 degrees 25 minutes
