Nutty Muffins

Ingredients
  All purpose flour 2 Cup (32 tbs)
  Sugar 3⁄4 Cup (12 tbs)
  Baking powder 2 Teaspoon
  Baking soda 1⁄2 Teaspoon
  Ground cinnamon 1⁄2 Teaspoon
  Salt 1⁄4 Teaspoon
  Buttermilk 1 Cup (16 tbs)
  Egg 1 , beaten
  Vegetable oil 2 Tablespoon
  Pistachios 3⁄4 Cup (12 tbs), toasted, coarsely chopped
  Raisins 1⁄2 Cup (8 tbs)
Directions

Combine flour, sugar, baking powder, soda, cinnamon, and salt in a medium bowl, make a well in center of mixture.
Combine buttermilk, egg, and oil, add to dry ingredients, stirring just until moistened.
Stir in pistachios and raisins.
Spoon into greased muffin pans, filling three-fourths full.
Bake at 400° for 20 minutes.

Hi, yes do need the baking soda to give light fluffy muffins. The ground cinnamon can be omitted or can be substituted with pumpkin pie spice if you like.
