Spicy Apple-Oat Muffins
|All purpose flour||1 Cup (16 tbs)|
|Oats||1 Cup (16 tbs), uncooked (Quick Cooking Oats)|
|Baking powder||2 Teaspoon|
|Apple pie spice||1⁄4 Teaspoon|
|Grated lemon rind||3⁄4 Teaspoon|
|Egg||1 , beaten|
|Apple juice||1⁄2 Cup (8 tbs) (Unsweetened)|
|Skim milk||1⁄4 Cup (4 tbs)|
|Vegetable oil||3 Tablespoon|
|Vegetable cooking spray||2 Tablespoon|
Combine dry ingredients and lemon rind, make a well in center of mixture.
Combine egg, apple juice, milk, and oil, add to dry ingredients, stirring just until moistened.
Spoon into muffin pans coated with cooking spray, filling three-fourths full.
Bake at 425Â° for 15 minutes.
