Marmalade Breakfast Muffins
|Buttermilk baking mix||2 1⁄4 Cup (36 tbs) (550 Ml)|
|Granulated sugar||2 Tablespoon (25 Ml)|
|Egg||1 , slightly beaten|
|Vanilla||2 Milliliter (1/2 Teaspoon)|
|Orange marmalade||1⁄4 Cup (4 tbs) (50 Ml, All Fruit)|
In a large bowl, combine buttermilk mix and sugar.
Add egg and vanilla, mixing just until blended.
Spoon batter into prepared muffin tin, filling cups half full.
Top each with 1 tsp (5 mL) orange marmalade.
Spoon remaining batter evenly over marmalade.
Bake in preheated oven for 12 to 15 minutes or until a toothpick inserted in center comes out clean.
NOTE: In place of the egg, you can use 1/4 cup (50 mL) egg substitute plus 1 cup (250 ml.) water.
