Marmalade Breakfast Muffins

Marmalade breakfast muffins offers you the fresh taste of orange and marmalade jelly in the morning. Baked with marmalade sperad and suagr with ahint of vanilla, these light, easy to bake muffins are just the thing to get you started in the morning.
Ingredients
  Buttermilk baking mix 2 1⁄4 Cup (36 tbs) (550 Ml)
  Granulated sugar 2 Tablespoon (25 Ml)
  Egg 1 , slightly beaten
  Vanilla 2 Milliliter (1/2 Teaspoon)
  Orange marmalade 1⁄4 Cup (4 tbs) (50 Ml, All Fruit)
Directions

In a large bowl, combine buttermilk mix and sugar.
Add egg and vanilla, mixing just until blended.
Spoon batter into prepared muffin tin, filling cups half full.
Top each with 1 tsp (5 mL) orange marmalade.
Spoon remaining batter evenly over marmalade.
Bake in preheated oven for 12 to 15 minutes or until a toothpick inserted in center comes out clean.
NOTE: In place of the egg, you can use 1/4 cup (50 mL) egg substitute plus 1 cup (250 ml.) water.
