Lemon-Glazed Apple Oatmeal Muffins

lemon glazed apple and oatmeal muffins is a lusciuous glazed muffin recipe that combines the flavor of apples with lemon. Filled with an assorment of lovely goodies like nuts , apple bits, nutmeg and cinnamon, this recipe is a baked delight. The glaze of icing sugar and leon juice adds a extra flavor profile to it.
Ingredients
  All purpose flour 1 1⁄4 Cup (20 tbs) (300 Ml)
  Packed light brown sugar 1⁄2 Cup (8 tbs) (125 Ml)
  Baking powder 1 1⁄2 Teaspoon (7 Ml)
  Baking soda 1 Teaspoon (5 Ml)
  Cinnamon 1 Teaspoon (5 Ml)
  Salt 1⁄2 Teaspoon (2 Ml)
  Ground nutmeg 1⁄4 Teaspoon (1 Ml)
  Egg 1
  Milk 125 Milliliter (1/2 Cup)
  Vegetable oil 50 Milliliter (1/4 Cup)
  Lemon juice 25 Milliliter (2 Tablespoon)
  Quick cooking oats 3⁄4 Cup (12 tbs) (175 Ml)
  Finely chopped apples 1 Cup (16 tbs) (250 Ml)
  Chopped nuts 1⁄2 Cup (8 tbs) (125 Ml)
  Icing sugar 1⁄2 Cup (8 tbs) (125 Ml)
  Lemon juice 15 Milliliter (1 Tablespoon)
  Butter/Margarine 1 Tablespoon, melted (15 Ml)
Directions

In a medium bowl, combine flour, sugar, baking powder, baking soda, cinnamon, salt and nutmeg.
In a large bowl, beat egg.
Add milk, oil and lemon juice.
Stir in oats and mix well.
Add flour mixture, blending well.
Add apples and nuts, stirring just until moistened and lumpy.
Do not overmix.
Spoon batter into prepared muffin tin, filling cups three-quarters full.
Bake in preheated oven for 20 minutes or until golden brown.
Meanwhile, in a small bowl, combine icing sugar, juice and butter.
Remove muffins from tin and place on a plate.
Drizzle with lemon glaze.
HINT: If you reduce or eliminate salt in recipes, use more herbs and spices to enhance the flavor.
Experiment with small amounts at first, such as 1/4 tsp (1 mL).
